Sous Chef reports to the Executive Chef and Food & Beverage Manager.



  • Planning menus and utilization of food surpluses and leftovers, considering probable number of guests, market conditions, popularity of various dishes and frequency of menu.
  • Reviews menus, analyses recipes, determines food, labor, overhead costs and assigns prices to menu items.
  • Introduces and tests the market with new products which are market-orientated in terms of price and product.
  • Observes methods of food preparation and cooking, sizes of portions, and garnishing of foods to ensure food is prepared in prescribed manner.
  • Tests cooked foods before plate-up and service.
  • Estimates food consumption and purchases or requisitions of foodstuffs and kitchen supplies.
  • Maximizes team’s productivity using multi-skilling, multi-tasking, and flexible scheduling to meet the financial goals of the business as well as the expectations of the guests.
  • The chef is responsible for selecting high-quality meats, marinating them, and ensuring they are cooked to perfection. This includes grilling, roasting, smoking, and other meat preparation techniques.



  • Previous experience working within a fast- paced 5* hotel environment.
  • Strong motivational skills and ability to successfully lead a diverse and cohesive team.
  • Exceptional interpersonal skills and attention to detail.
  • Polite, pleasant demeanour with a neat appearance.
  • Possesses creativity, professionalism, and human management capabilities.
  • Capable of handling pressure and resolving restaurant issues.
  • Ability to coordinate and prioritize tasks such as cost management while maintaining operational standards.
  • Expertise in budgeting, forecasting, expenses.
  • High ethical standards and integrity.
  • Strategic thinking and planning capabilities.
